this week special is, the soon to be world famous, cassoulet de chef “Chris”…

you see when you come from the south-west of France as does Chris, the first thing you learn

from your mother is…how to make “cassoulet”…so age 5 Chris was already making it…incroyable…

so after long and hard negociation, he agreed to cook it for our customers…

so voila for this week special

et oui…incroyable…the restaurant L’absinthe was 4 years old last sunday the 20th of november….

we haven’t properly celebrated yet but we had a little party the week before for Mimi “pot de depart” and

some of staff still looked rough by sunday anyway…c’est ca la jeunesse…

this week the special is Blanquette de veau a l’ancienne served with rice

we owe this one to Laurent, for now nearly 4 years is been banging on about this dishe that is mother

used to cook for him in Paris, so we got chef Chris to try to replicate it (with more or less success…you can beat mum’s cooking”)

et voila…

i can see some of you enjoying it with a nice bottle of Pouilly-Fuisse from domaine Jeandeau or our Bourgogne pinot noir from our

friend JM Pillot…un regale…

this week special is roast rump of lamb, beautiful meat supplied by Bob ze butcher (barrett’s in england’s lane)

juicy, tender, tasty meat served with coco beans in tomato sauce and garlic jus.

a “tour de force” from chef Chris

with this we could stay classic and go for bordeaux wines, but beacause of the flavour and the sweetness of the dish

i recommended one of my customer the St Joseph cuvee caroline from domaine Cheze 2007…incroyable…

he was so happy he nearly ask me to marry him but i could see the wife was not going to have it…so i say

“c’est la vie” …till next time, remenber there is nothing serious about eating it should only be enjoyment and pleasure

life is too short not to have fun….

i have decided to move into the 21st century and embrasse the internet

so i will keep you posted on a regular basic about us

et voila…who knows maybe one day i will even twit…don’t be silly…

Holidays have finally (……) got to the end and we are back in track, ready for new challenges! We don’t miss at all sunny seasides or blooming country sides or lazy days spent drinking and eating in front of beautiful panoramas…. no no no…. mah…. anyway,  since we are all back to work (no one of us won the lottery) we may well do it nicely!

We haven’t disappear yet… busy running the shop and setting up “few” things… but here we are! Shop’s look and offer are developing and with few more persons on board and despite being South-European we finally manage to open 7 days a week!

New opening hours for the moment are

Monday to Friday from 8am to 8pm

Saturday&Sunday from 9am to 5pm

Fresh Baguettes and Croissants everyday and on Saturday and Sunday you can try our Crepes, Croque Madame&Monsieur, Pain Perdu (the French Toast)! Incroyable!

Also the traiteur service is improving: check out our delicious offer of meals and desserts we can prepare for you to take home!
